Ingredients
plain flour: 150g
baking powder: 1 teaspoon
baking soda: 1/3 tsp.
salt: 1/4 tsp.
bananas: 2 (squashy)
brown sugar: 25g
egg: 1
milk: 2 tbsp.
canola oil / olive oil: 50ml
walnuts: 50-80g
Method
1. Reserve 10 pieces of whole walnuts, Dice others into small pieces.
2. Mash bananas.
3. Whisk egg and brown sugar in a mixing bowl until sugar dissolves. Add in oil and mashed banana. Continue whisking until totally blended in.
4. Sift flour, baking powder, baking soda and salt directly in the mixture by 2 times. Fold in gently well.
5. blend in diced walnuts and mix well.
6. Preheat oven at 180 degree.
7. Spoon mixture into muffin paper cups placed about 70% full, top with a piece of whole walnut. Bake for about 15 minutes until cake is well risen and golden brown. Test readiness and cool on a track.
